Back. Back again.

It’s been a minute.

I’m back, trying to process the world.

As it stands right now, I’m a 50+ woman with twin teenagers, a husband, and 2 dogs. I have a roof over my head, food on the table, and clothes on my back. I am lucky. My limbs mostly work (I am bionic, after all). Mostly my car works. My kids and husband are all relatively healthy. We have been able to keep our heads above water and meds paid for.

Daily Motto: Everything will work out and everyone will eventually be paid.

First – we pay off/down the CC debit because they carry interest. Then we pay off/down the medical debt. Next up on the agenda will be to fix C’s tooth, everyone’s glasses, and then the roof/family room ceiling. Then the oven replacement. and maybe someone to fix the stupid ring camera doorbell already.

Maybe I’ll be able to get a job at some point… It’s not for lack of trying or anything. I’ve been using AI to help me write Cover letters, to tailor my Resumes to the qualifications listed in the job ads… but it’s not all reviewed after by me. It’s a more polished version of me. That’s all, really.

OKAY – Onto Food Thingies and less about my stressors.

Bread - Gold Medal Bread Bag Recipe

I really REALLY want to be able to bake good bread.

Bread that people crave, that people look forward to eating, to really DELICIOUS bread.

Not it.

I dunno what I’m doing wrong, really. Too much salt? Not enough salt? Add butter? Add margarine?

This last batch from the back of the Gold Medal Bread Flour Bag is fluffy, deliciously light. It slices beautifully. It rose quickly and baked off so so easily.

And yet.

**insert sigh here**

And yet it’s just meh.

I started making the bread because we’re almost out of regular bread and I want the kids to have options for meals and meal making. They know how to make grilled cheese sandwiches and I want to make sure they have the tools available to feed themselves.

Bread, cheese, butter – all things we have in the house at all times.

So – we’re nearly out of commercial bread, and I thought – NO TIME LIKE THE PRESENT!

Yeaaaaah.

It’s … fine.

Maybe I’ll try it again but with butter instead of margarine. And maybe with some salt too.

After we slog through these two loaves that is…

Meh.

And no – no one in my family likes Sourdough. I will not be pursuing that hobby/venture.

7 year old approved!

Dinner tonight was actually made yesterday. Love meals like that. Especially after spending most of my day running around taking toddlers in and then out of strollers and shopping carts while standing in one line after another. Yesterday I made beef … Continue reading

I suck at cleaning.

If you ask my husband what it is the Number One thing I’m bad at?  His immediate response is “Washing Dishes”.  *sigh* Tonight’s dinner made a huuuuuuge mess in the kitchen.  Thank goodness it was delicious. We had Provençal Sauteed Chicken with … Continue reading

Nothing is quite as good as Homemade Bread

I sincerely doubt there is anything quite as good as Homemade Bread.  The smell, the taste, the chew…*sigh* For a wedding gift my sweet Aunt L gave us the Artisan Bread in Five Minutes a Day book.  It looks beautiful … Continue reading

Lunch *AND* Dinner?? Huzzah!!

Today for lunch we had Roasted Tofu with garden vegetables and rice.  The original recipe was for Roasted Tofu with Leeks and Fermented Black Bean Sauce, but it’s raining out and I didn’t feel like venturing out into the wetness … Continue reading
