KUMQUATS
Aren’t they a fun word to say? Nearly a swear word, right? I can picture some kid – okay, my kids – storming around the house stomping and yelling YOU KUMQUAT! That makes me giggle.
They’re the size of an olive, they’re orange and they taste kinda like an inside out orange – they’re sweet on the outside and bitter on the inside.
…Am I the only one who buys stuff at the grocery store and then goes home and figures out what to do with it?
For dessert tonight I made candied kumquats with pomegranate arils (seeds) with whipped cream.
I think we all licked our bowls clean!
Candied Kumquats with Pomegranate Arils and Whipped Cream by Me and Elise from Simply Recipes
Serves 4
Ingredients:
1 cup Water
2 cups Sugar
4 cups Kumquats, roughly chopped and de-seeded
1 cup Pomegranate Arils
2 cups Whipped Cream **I used Cool Whip today. Feel free to make your own!
How To:
1- Heat the sugar and water over medium heat until it comes to a boil. Lower heat and simmer for 4 minutes. Add kumquats and simmer for 10 minutes.
2- Drain kumquats through a strainer over a bowl. Return syrup to the pan and simmer for 5 minutes to reduce the syrup. Combine the kumquats and 1/4 cup of the syrup together. Let sit and cool.
3- Scoop 1/4 of the mix into each serving bowl. Top with 1/4 cup pomegranate arils and a big-assed dollop of whipped cream.
Serve!
