Bean and Cheese Quesadllias for Lunch?

I start by cutting up a medium sized onion, sautéing it in some olive oil, adding some cumin and oregano (about 1/4 t each), mixing in a can of drained and rinsed black beans, then mixing about 1/2 C of shredded cheese in til it all melts into a delicious mess.
I throw some tortillas (I’ve been using all different sized tortillas, but I think I like the 4″ ones best) onto either a nonstick griddle or a nonstick frying pan. I highly recommend you use a nonstick pan. Highly. Please let my experience be your guide! So I leave the tortillas on the pan on VERY low heat til they get all crispy on one side, then I flip them over for another minute or two. I top them with the bean and cheese mix, spread it all out with the back of the spoon, then top it with another toasted tortilla. Transfer to a cutting board/plate/flat surface and cut into 6 pieces. Perfect for toddler-sized hands!
Bean & Cheese Quesadillas by Me
Ingredients:
1 Medium Onion, chopped smallish
1 Tablespoon Olive Oil (any oil will do actually)
1/4 teaspoon Oregano
1/4 teaspoon Cumin **Feel free to add more or less to your taste. You can add in whatever you see fit, actually. It’s your belly!
1 15oz. can Black Beans, Pinto Beans, whatever beans you have on hand, drained and rinsed.
2 Tortillas/Quesadilla = if you’re feeding 2 toddlers, sometimes they’ll eat 1 sandwich, sometimes they’ll 3…. *sigh*
1/2 cup Shredded Cheese – I usually Cheddar, but any mild cheese will be fine.
How To:
1- Heat oil in a pan, sautee onions in the oil.
2- Add spices.
3- Add drained & rinsed beans.
4- Mash them a little bit with the back of your spoon.
5- Add in cheese.
6- Stir to incorporate everything.
7- On a nonstick pan/griddle/whatever toast first side of tortilla (about 1 minute or 2 on low heat).
8- Flip the tortillas over and lay on the bean mix.
9- Top with another toasted tortilla.
10- Transfer to a cutting board and slice away!
Oh – I find these transport well too, so I often make them ahead of time to bring with us on adventures….
