I’ve been going a little Nutso-Crazypants lately trying to balance family, a new business (www.littlebirdchocolates.com), my day job and – like everyone else in the world – my sanity.

The GOOD news has been that I’ve been getting some GREAT response from you guys asking me to write again, and the biz has been going GANGBUSTERS (WAHOOOOOO!).
I’ve been in full-on recipe testing mode – and NONE of it has been Weight-Watchers friendly. I warn you in advance.
That aside – I’ve been a CARAMEL MAKING FIEND.
On Sunday alone I cranked out 4 different caramel variations and when I got home from work I created another one.
Lucky for you – I will share with you some of the ones I’ve been tinkering with:
David Lebovitz’s Salted Butter Caramels
Smitten Kitchen’s Salted Chocolate Caramels (I left out the chocolate though, for consistency sake)
Sophisticated Pie’s Bourbon Caramels
Everything Gal’s Bourbon Caramels
And that’s only FOUR of the recipes I’ve been trying out.
And mind you, with each iteration I keep adjusting the butter and cream levels or the cooking temperatures….
Oh the list of variables goes on and on.
I obsess easily.
